Strawberries and goat cheese are a tasty combination, and when you add the refreshing bite of arugula and balsamic vinegar as well as additional berries and nuts, it leads to a truly great salad to share with friends and family this summer.
Ingredients
- 1/4 medium sized red onion, sliced
- 4 loosely packed cups of arugula leaves (or other greens/spinach)
- 1 1/2 cups of berries including sliced strawberries, blueberries and raspberries
- 3 ounces of goat cheese crumbled
- 1/2 cup walnuts (roughly diced)
- 1-2 tablespoons of balsamic vinegar
- 2-3 tablespoons of olive oil
- a couple shakes of salt and pepper to taste
Instructions

Mix the balsamic vinegar with the olive oil, salt, and pepper. This is easiest in a small container with a lid so you can shake the dressing until blended.

Toss the onions, arugula, berries, and dressing until the salad elements are coated.

Top with crumbled goat cheese and diced walnuts.
Options
You can choose to use only one type of berry in this salad. Feta cheese can be used in place of goat cheese if you like, and just about any nut will make this salad interesting and special, such as sliced almonds, pecans, or sunflower seeds. Just keep the ingredients fresh, light, and summer-focused, and the salad is bound to be a crowd-pleaser.
