Summer Veggie Nachos

Savor the tastes of summer with this dish the whole family can dive into

It's the time of the season when fresh produce abounds, so grab your bag or baskets (or wagon) and head to the nearest farmer's market. For a simple way to enjoy all those freshly harvested flavors of summer try this one tray meal.

Summer Veggie Nachos

1 bag tortilla chips

1 8oz bag of shredded Mexican blend cheese 

1 15oz can black beans, seasoned and cooked

1 large tomato, diced

2 ears of corn, grilled or boiled and sliced from the cob

1/2 onion, diced

1 jalapeno, sliced

1 cup pitted black olives, sliced

5-7 sprigs of cilantro, chopped

1/2 lime

Directions:

Preheat oven to 400 degrees.

On large baking sheet layer chips first, then black beans, then top with shredded cheese. 

Place tray in oven until cheese is melted, about 5 minutes.

Remove tray of chips from oven, then top with all ingredients. Finish with cilantro, then squeeze fresh lime and serve.
