Sweet Potato Crostini

The Perfect Start To Your Thanksgiving Feast

Sweet Potato Crostini

A quick and simple appetizer with seasonal ingredients and flavors. Perfect to kick off your Thanksgiving feast! 

Ingredients:

2 large sweet potatoes, cut horizontally in 1/3-inch slices

Salt & pepper

1/2 cup garlic & herb Boursin, or herbed goat cheese

1 ripe pear, cut into 1/4 inch slices

2 Tbsp thyme leaves, more sprigs for garnish

2 Tbsp walnuts halves or pieces 

Directions:

1. Heat oven to 425 F. Adjust an oven rack to the center of your oven.

2. Spray a sheet pan with cooking spray. Top with sweet potato slices in a single layer. Spray sweet potatoes with cooking spray and sprinkle with pinch of salt.

3. Cook sweet potatoes in preheated oven for 20 mins, flip, then cook on the other side for 15-20 minutes until slightly browned. Pull from oven and cool for 10-15 minutes.

4. Meanwhile, toast walnuts in a dry sauté pan over medium heat for 7-10 minutes, just until you start to smell them. (Careful not to burn!)

4. When the sweet potato crostini are at room temperature, spread them with herbed cheese, top with a pear slice, thyme leaves, then walnuts. Sprinkle completed crostini with salt and freshly cracked black pepper.

Enjoy at room temp.
