Move over Taco Tuesday, there’s no keeping this favorite from crashing a dinner party on Monday all the way through the weekend. Versatility is one reason for the taco’s popularity. Regardless of favorite flavor profiles, everyone can fill a tortilla with ingredients just right for them. Need inspiration? Start by pouring a margarita, then construct your choice with some suggested combinations below:  

SPICED

+ White fish, broiled or barbecued, with fresh lime

+ Mango salsa

+ Sliced cabbage

+ Spicy Chipotle Aioli: 1/2 cup mayonnaise, 1 T fresh lime juice, 1 tsp. chipotle chili powder, 1 clove garlic (minced), salt and pepper to taste. Chill before serving.

GRILLED

+ Chicken thighs, marinated 1 hour in 2 T olive oil, 2 T fresh lime juice, 1 tsp. chili powder, ½ tsp. salt, ¼ tsp. pepper. Grill 8-10 minutes per side on med-high heat until meat is cooked thoroughly.

+ Avocado

+ Pico de gallo

GROWN

+ Portobello mushroom caps, grilled, then sliced

+ Pineapple Salsa: Half of a medium fresh pineapple, diced; ½ cup red onion, chopped; 1 jalapeño, seeded and chopped fine; 2 T fresh lime juice, ¼ cup cilantro, chopped (optional); salt to taste.  

+ Guacamole

+ Cotija cheese
