+ Spicy Chipotle Aioli: 1/2 cup mayonnaise, 1 T fresh lime juice, 1 tsp. chipotle chili powder, 1 clove garlic (minced), salt and pepper to taste. Chill before serving.
GRILLED
+ Chicken thighs, marinated 1 hour in 2 T olive oil, 2 T fresh lime juice, 1 tsp. chili powder, ½ tsp. salt, ¼ tsp. pepper. Grill 8-10 minutes per side on med-high heat until meat is cooked thoroughly.
