A Classic Favorite With A Healthy Spin; Tater Tots Made From Cauliflower Rice

Cauliflower tots

Tater tots are a classic kids favorite, and now you can give them a healthy spin! By subbing cauliflower for the traditional potatoes, you will get in an extra serving of veggies. These cauli-tots are low-carb, gluten-free, and paleo-friendly, so they are likely to be a hit with the whole family!

TIP: Purchasing pre-riced cauliflower in frozen steamer packs, such as those from Costco, really cuts down the prep time.

INGREDIENTS:

2 cups cauliflower rice, steamed

1/4 cup Parmesan cheese

1/4 yellow onion, grated or very finely diced

1/4 cup almond flour (more as needed)

2 Tbsp nutritional yeast (or more Parmesan cheese)

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

1 egg, beaten

Cooking spray

DIRECTIONS:

  1. Steam cauliflower rice in microwave or stovetop until tender.
  2. Remove cauliflower rice to a few paper towels and squeeze to remove excess water.
  3. Mix the rest of the ingredients, except egg, in a medium bowl. Add cauli rice and stir to combine. Add beaten egg and stir again. If too wet, add more almond flour, 1 Tbsp at a time. Let sit for 15-20 minutes to settle.
  4. Preheat oven to 425 F and line a baking sheet with parchment paper. Spray parchment paper with cooking spray.
  5. Using your hands, form cauliflower mixture into tots and place on baking sheet in a single layer.
  6. Spray tots with cooking spray.
  7. Bake for 20 minutes, flipping at 10 minutes, until crispy and lightly browned.
  8. Serve with ketchup or your favorite dipping sauce.
