Thanksgiving has always been one of those meals I love as much for what comes after as for the dinner itself. There’s something especially satisfying about opening the refrigerator the next day and seeing all those little containers of turkey, vegetables and gravy waiting for a second life. This pie is mine.
It started as a practical way to use leftovers, but over the years it became something I genuinely look forward to making. Everything that tastes like Thanksgiving gets tucked into a buttery pie crust, covered with another layer of pastry and baked until the filling is bubbling and the top is golden. It’s cozy, unfussy and somehow tastes even better when everyone has traded their holiday clothes for pajamas.
My favorite part, though, has nothing to do with the filling. Save the scraps when you trim the top crust and let the kids use them to decorate the pie before it goes into the oven. They can cut out leaves, hearts, letters or whatever else they dream up. It’s a simple way to give little hands a job in the kitchen, and every pie ends up looking a little different.
There are no precious measurements for the turkey or vegetables here because Thanksgiving leftovers don’t arrive in tidy quantities. Use what you have. A little more turkey one year, extra green beans or carrots the next. It works.
That’s probably what I love most about this recipe. Thanksgiving dinner can require days of planning, shopping, chopping and timing. This is the opposite: gather what remains, pile it into a crust, and make something wonderful from it. The holiday gets to linger for one more meal, and somehow, the quieter meal afterward is sometimes my favorite.
