The Art of Charcuterie

The Arvada Tavern does. And cheese too. Chef Jordon Coppel says, “A good charcuterie spread will engage more than just your tastebuds; it should be colorful, aromatic, textured, and flavorful.” 

There are numerous variations when it comes to cured meats, artisan cheeses, and pairing them together. Chef Jordon prefers to use products that fit the seasons. The Tavern carries a variety of ingredients to create a multidimensional flavor profile and to cater to those who prefer an alternative taste. One of Jordon’s favorite experiences is “...sampling new items as a team and discussing the potential for our next board. Currently we are using cheeses from Italy, Australia, and Wisconsin, and our meats are from Italy and California. When you find a cheese that you like from one part of the world and then stumble upon a nice salami from another country, and then they pair perfectly together, it is a symbol of the complementary relationships we create within the world around us.” 

When you are selecting ingredients for the perfect charcuterie board, Chef Jordon says “...it is important that the flavors play off each other well. Whether you are using a crostini with a fruit spread or a piece of cheese with some cured meat, the tasting notes should burst out in their own solo but come together as a harmonious orchestra while stimulating each part of the palate.” 

  1. Mortadella is an Italian style meat infused with black peppercorns.

  2. Roelli Red Rock Cheddar Blue Cheese is a Wisconsin cave-aged cheddar filled with veins of blue cheese.

  3. Sheep and Goat Milk Cheese is from Meredith Dairy in Australia, and is marinated in olive oil, herbs, and garlic. 

  4. Nita Crisps are a flattened wheat cracker made in Fort Collins, CO by a local Larimer County organization that provides services for individuals with cognitive disabilities. 

  5. Parmesan Crostinis are made in house from leftover pretzels. They are sliced thinly, seasoned, coated in parmesan cheese, and baked until perfectly crispy.

  6. Fig Spread is a unique and fairly smooth jam that complements both sweet and savory tastes.
