For Douglas Flick, baking has always been about more than following a recipe. It is about technique, creativity and creating something that makes people excited to come back for another bite. At Park Street Pastry in Olathe, Flick brings years of experience in the culinary industry and education to a bakery built around fresh, European-style pastries and a comfortable, welcoming atmosphere.
“I opened Park Street Pastry because I wanted to provide great quality, fresh European style pastries in a unique setting,” Flick says.
That philosophy is reflected in the bakery itself, which Flick describes as a laid-back, home-style experience where customers can enjoy thoughtfully made pastries without feeling overly formal.
Behind the scenes, Flick continues to approach baking with the mindset of an educator. While he did not start the culinary program at Johnson County Community College, he did start the school's baking and pastry program, with the goal of preparing aspiring pastry chefs to work in a professional environment.
That experience continues to influence his work today.
“I continually try to teach, create and develop new styles of pastries,” he says.
For Flick, however, creating something memorable does not necessarily mean making it complicated. In fact, he believes the opposite can often be true.
“I believe great tasting simplicity is the key to well made pastries,” he says.
That philosophy can be seen in some of Park Street Pastry's signature favorites, including the kouign amann, chocolate croissant and cinnamon rolls. Each offers the kind of familiar comfort that makes a bakery visit special while showcasing the techniques and traditions behind European-style baking.
After years in the culinary industry, Flick says what continues to motivate him is surprisingly simple.
“I get excited about waking up every morning and getting to create pastries that excite customers,” he says.
That spirit of experimentation is also reflected in the bakery's approach to its menu. Rather than simply rotating a set selection of items, Flick and his team continue creating new pastries and introducing them to customers to see what they think.
“Things are always changing,” Flick says. “We do not rotate items. We create new items and offer them to our customers to get their feedback.”
That willingness to try something new has also shaped the relationship between the bakery and its customers. Flick says he has noticed that customers have become more willing to branch out and try pastries they have never experienced before.
For someone who has spent years teaching others the craft, those relationships have become one of the most meaningful parts of his career.
“I am most proud of the relationships that have been built over the years,” Flick says.
His advice to aspiring culinary professionals reflects the perseverance required to build those relationships and develop a career in the industry.
“Stick with it and have an open mind and open any doors that close in front of you,” he says.
At Park Street Pastry, that combination of tradition, creativity and simplicity continues to shape the experience. Customers can stop in for a familiar favorite, discover something new or simply enjoy a pastry in a comfortable setting.
And for Flick, there is always another creation waiting to come out of the kitchen.
