“You see the food and drink, but not the energy,” says Hibbert. “Our live band performs 40+ custom remixes of pop, EDM, and more.”
What's in a name?
“It came from the hand-crafted culinary instrument that every chef cherishes like an extension of themselves,” Hibbert explains.
On ingredient integrity:
“We don’t use seed oils. Our steaks are seared in beef tallow with rosemary and garlic,” says Hibbert.

Beverage Director Lyndsi Mundy is Shiv's drink designer. “It’s all about the music in the room, the guest, what the sip should feel like. And if it doesn’t photograph well, it doesn’t make the menu.”
Mundy's drink philosophy:
- Trending ingredient: Foam. “It’s playful, but precise.”
- Pairing cocktails with food: “Drinks are a course of their own. We use acid and aromatics to balance richness.”
- Creating drinks for the room: “We don’t do sleepy cocktails.”
- Biggest misconception: “That it’s just about flavor. A cocktail is architecture.”
