Patrick and Meagan Miller share their passion for the Irish tradition of single pot distilling

For Patrick and Meagan Miller, an outing to a pub fifteen years ago while on their honeymoon in Ireland ignited an idea and passion that led them to bring an ancient Irish tradition to America. “We were watching Team USA play Ireland at the Rugby World Cup. Although unfortunately the United States would lose that day, we got our very first taste of a whiskey called Red Breast 12-Year-Old Cask Strength,” shares Patrick. “It was the first time that this style of whiskey, called Single Pot Still Whiskey, was re-released to the Irish market in decades.”

The couple went back to Ireland year after year, learning more about this unique single pot distilling process and sharing the product with friends. “It was Meagan's idea that we really seriously look into what it would look like to start our own distillery,” says Patrick. “Because nobody else in the U.S. was making this style of whiskey.” The idea took hold and the couple set out to learn about the commercial distilling process. Then, after developing recipes in their home, they found a space to house the distillery and started making whiskey in January 2018. They opened Talnua Distillery on St. Patrick’s Day in 2019.

Talnua Distillery is the only distillery in the U.S. fully dedicated to producing whiskey using the single pot distilling process, something that excites the couple. “The Irish invented whiskey centuries ago and it's a really beautiful thing to be a part of that heritage and reviving this ancient Irish distilling tradition here in the U.S.,” says Patrick. “That’s our namesake; Talnua is derived from the Irish word for new land. We are bringing this old traditional style of Irish whiskey making here to America.” “The distilling and craft manufacturing producers’ community is full of phenomenal people,” adds Meagan. “We love being a part that community in general, but also like being the standard bearers of the style of whiskey that we make.”

Made from barley, this style of whiskey is a perfect fit for Colorado, also known as America’s barley state. “What we're doing here effectively is espousing the provenance and terroir, that beautiful French word for a sense of place and the taste of something, of Colorado,” says Patrick. “The Colorado high county barley, Rocky Mountain water from El Dorado Springs, and our high altitude aging really impart a very different flavor profile than you would get for the same exact whiskey being made in Ireland.” Using different aging techniques and materials, Talnua whiskey comes in different varieties and flavors that please the most distinguished palates. “We have an American White Oak Cask Bottled-In-Bond whiskey that we say is distilled like an Irish whiskey but aged like an American bourbon in charred new American oak,” explains Patrick. “There is also our Cask & Stave Series that won America's Greatest Whiskey last year, which is a huge award for us.

It is ex-bourbon barrels that we then add French and American oak staves to. We also have a Sherry Cask aged in Oloroso sherry and a Peated Cask aged in ex-Scottish single malt barrels that were heavily peated single malts, giving it a nice smoky element.” In addition to a variety of original whiskey products, the distillery has a full seasonal cocktail menu and hosts special events, bottle releases, and tours that allow guests an inside look at the process and even get them involved on volunteer bottling nights. In September, Talnua Distillery hosted a sesquicentennial event celebrating Colorado's 150th anniversary with a single barrel release. The event also served as a way to give back to the community by raising money for Colorado Open Lands through the distillery’s philanthropic arm of the distillery, the Acorn Project. Talnua Distillery recently received the 2026 Distillery of the Year award, known as the Bubble Cap Award, from the American Distilling Institute. This prestigious honor, which singles out Talnua Distillery from 2100 distilleries in North America, recognizes the hard work by Patrick and Meagan Miller to produce high-quality spirits in an innovative way while supporting and engaging with the local community.

“We’re grateful that ADI recognized not just our whiskey, but our team, our community, and our commitment to the craft,” says Patrick. “We’re really proud of what we’ve built over the past nine years, and it’s incredibly meaningful to see that work recognized.”
