Cornbread has long been a staple of Southern New Year’s Day traditions, symbolizing gold and prosperity for the year ahead. Chef Bill’s Southwestern Cornbread brings a flavorful twist to this beloved dish, with jalapeños for spice and cheddar for richness. It’s a delicious way to start the year off right!

Southwestern Cornbread

Ingredients

1 1/2 cups Martha White Cornmeal Mix

1 cup cream style corn

1 cup buttermilk

1/2 cup oil

2 eggs, beaten

2 tablespoons chopped jalapenos

1/4 cup chopped onion

1 cup shredded cheddar 

Directions

1 Combine all ingredients, except the cheese.

2 Pour half the mixture into a greased iron skillet or 9 x 9 pan.

3 Top with cheese.

4 Spread remaining batter over the top.

5 Bake at 450 degrees for 30 minutes; test before removing from the oven.
