Sweeten Your Valentine’s Day with This Maple Oatmeal Pie Delight

A delightful twist on a classic dessert, this pie combines the rich sweetness of maple syrup with the hearty texture of oats, flaked coconut, and chopped walnuts. Perfect for a cozy evening or as the star of your Valentine’s Day dessert spread, this pie is best served chilled with a dollop of cinnamon-spiced whipped cream. Whether you’re sharing it with loved ones or savoring a slice solo, this recipe is sure to become a new favorite in your kitchen.

Maple Oatmeal Pie

Serves 8

2 eggs, lightly beaten

¾ cup maple syrup

½ cup granulated sugar

½ cup packed brown sugar

½ cup milk

½ cup melted butter

2 tablespoons plain all-purpose flour

1 teaspoon vanilla

1 cup flaked coconut

¾ cup rolled oats

½ cup chopped walnuts

1 deep dish pie shell, unbaked

1. Preheat the oven to 375°.

2. In a large bowl, combine eggs, syrups, sugars, milk, butter and vanilla.

3. Stir in flour, coconut, oats and walnuts.

4. Pour filling into an unbaked pie shell.

5. Bake for 35-40 minutes or until a knife inserted in the center comes out clean.

6. Cool on a wire rack and chill overnight.

7. Serve with a dollop of cinnamon whipped cream.

To make cinnamon whipped cream: combine 1 cup heavy whipping cream, 2

tablespoons powdered sugar, 1 teaspoon vanilla, and ½ teaspoon ground cinnamon.

Beat with an electric mixer until soft peaks form and the mixture appears fluffy. Serve in a

chilled bowl.
