A Thanksgiving feast where Old World romance meets South Florida exuberance

Palm Beach has always existed between two worlds. Its Mediterranean architecture, formal gardens and traditions of entertaining recall Europe, while its tropical landscape, saturated color and sense of possibility are unmistakably South Floridian. It is where Old World romance meets New World confidence.

Now, a younger Palm Beach is bringing fresh energy to that tradition. Restaurants are livelier, interiors more expressive and entertaining less concerned with rules. But modern does not have to mean minimal. At Evolved Catering & Events, I’m interested in reviving the beauty, craftsmanship and sense of occasion that once defined entertaining—and making it feel exciting again.

Because entertaining is an art. Food, flowers, candlelight, linens and music all shape how an evening feels. It needn’t be stuffy, and it certainly doesn’t require the host to spend three days in the kitchen. The real luxury is creating something layered, generous and memorable, while still being able to enjoy it yourself.

For this Thanksgiving table, I imagined a Renaissance banquet through a Palm Beach lens: antique brass, jewel-toned florals, richly woven textiles and pomegranates, apples and grapes gathered among candlelight. Cakes become part of the setting itself, displayed like treasures rather than simply appearing at the end of the meal.

The story continues in the desserts themselves. The two recipes shared here represent opposite sides of the Palm Beach sensibility: one fresh, tropical and unmistakably Floridian, with Key lime, passion fruit and toasted coconut; the other dark, decadent and rooted in European pastry tradition, with bittersweet chocolate, espresso, orange and praline. Together, they feel lush, celebratory and perfectly at home on a modern Thanksgiving table.

ROYAL PALM KEY LIME & PASSION FRUIT TARTE

Silky Key lime and passion-fruit custard in a toasted coconut-graham crust, finished with torched Swiss meringue, fresh passion fruit and candied citrus.

Serves 10–12

INGREDIENTS

Crust
1½ cups graham-cracker crumbs
½ cup finely shredded unsweetened coconut, toasted
¼ cup granulated sugar
¼ tsp. kosher salt
6 Tbsp. unsalted butter, melted

Filling
5 large egg yolks
2 (14-oz.) cans sweetened condensed milk
½ cup fresh Key lime juice
¼ cup strained passion-fruit purée
1 Tbsp. Key lime zest
¼ tsp. kosher salt

Swiss Meringue
5 large egg whites
1½ cups granulated sugar
¼ tsp. cream of tartar
Pinch of salt
1 tsp. vanilla

To Finish
Fresh passion-fruit pulp
Candied lime or orange peel
Edible flowers
Gold leaf

METHOD

  1. Heat oven to 350°F. Combine crust ingredients, press firmly into a 9-inch tart pan and bake 9–10 minutes. Cool slightly.
  2. Whisk yolks until smooth, then add condensed milk, Key lime juice, passion-fruit purée, zest and salt. Let stand 5 minutes, pour into crust and bake 16–20 minutes, until edges are set and center has a slight wobble.
  3. Cool completely and refrigerate at least 4 hours.
  4. For the meringue, combine egg whites, sugar, cream of tartar and salt over a bain-marie. Whisk until sugar dissolves and mixture reaches 160°F.
  5. Transfer to a mixer and whip until glossy, stiff and nearly cool. Add vanilla.
  6. Pipe meringue over tart and torch. Finish with passion fruit, candied citrus, edible flowers and restrained gold leaf.

PALM BEACH CHOCOLATE MARQUISE

Dense flourless dark chocolate finished with espresso-orange ganache, pecan praline and brûléed citrus.

Serves 12–14

INGREDIENTS

Cake
12 oz. bittersweet chocolate, about 70%
1 cup unsalted butter
6 large eggs, separated
¾ cup granulated sugar, divided
¼ cup Dutch-process cocoa powder
1 tsp. vanilla
½ tsp. kosher salt

Espresso-Orange Ganache
8 oz. bittersweet chocolate, finely chopped
¾ cup heavy cream
1 tsp. instant espresso powder
Zest of ½ orange
1 Tbsp. unsalted butter
Pinch of salt

Pecan Praline
¾ cup granulated sugar
2 Tbsp. water
¾ cup toasted pecans
Flaky sea salt

To Finish
Orange segments or thin orange slices
Granulated sugar, for brûléeing
Tiny berries
Flaky sea salt
Gold leaf

METHOD

  1. Heat oven to 325°F. Butter and line a 9-inch springform pan.
  2. Melt chocolate and butter over a bain-marie; cool slightly. Whisk yolks with half the sugar until pale and thick, then stir into the chocolate with cocoa, vanilla and salt.
  3. Whip egg whites to soft peaks. Gradually add remaining sugar and whip to glossy medium peaks. Fold into chocolate mixture in three additions.
  4. Bake 32–38 minutes, until edges are set and center remains slightly soft. Cool completely; the cake will settle as it cools.
  5. For the ganache, bring cream, espresso and orange zest just to a simmer. Let stand 5 minutes, then strain over chopped chocolate. Rest 1 minute, stir until glossy and mix in butter and salt. Spread a thin layer over the chilled cake.
  6. For the praline, cook sugar and water to a deep amber caramel. Stir in pecans and immediately spread onto a silicone mat. Sprinkle with sea salt, cool and break into shards.
  7. For the brûléed orange, pat orange segments or thin slices dry and sprinkle lightly with granulated sugar. Caramelize with a kitchen torch until the sugar is melted and golden; cool briefly.
  8. Finish with praline shards, brûléed orange, tiny berries, flaky sea salt and minimal gold leaf.
