Ingredients

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoons baking powder
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate
  • candy canes

Directions:

In a large bowl with a paddle attachment, beat the butter, granulated sugar, and brown sugar together on medium high until fluffy and light in color. Add the egg, vanilla extract and mix until combined.

Add the flour, cocoa powder, baking soda, baking powder and salt. Beat on low until combined. Fold in the chocolate chips.

Scoop the cookie dough into balls using a small ice cream scooper. The dough will be thick and sticky. Refrigerate for 20 mins. Roll the cookies to make smooth balls.

Preheat oven to 375°F. Line a baking sheet with parchment paper. Arrange the dough balls 2-3 inches apart on the baking sheets. Bake the cookies for 8-11 minutes or until the edges appear set.

Cool cookies for 5 minutes on the baking sheet, and then transfer to a cooling rack.

Melt the white chocolate in the microwave for 1 min. Stir until smooth. When cool, dip each cookie halfway into the white chocolate and place onto parchment paper. Decorate with crushed candy canes on top of the white chocolate before it sets.
