There’s Always Room for Cake

Life is short. Eat the cake.

We’re planning a November wedding for our son and his fiancée, and it’s time to sample wedding cakes. There are lots of new trends and flavors to choose from, so we reached out to Jerica Diez, owner of oCAKEsions Las Vegas.

Whether designing a custom birthday, wedding, baby shower, graduation, or any milestone cake, the flavors come first. Currently, Jerica says the most popular flavor is Hawaiian Guava cake made with strawberry guava cake, homemade guava gel glaze, and a tangy cream cheese filling. She also recommends Mango Lovers, Classic Strawberries & Cream, and Chocolate Lover’s Delight. You can even kick it up a notch with some Grand Marnier syrup. People don’t settle for vanilla…unless that’s your favorite.

Lately, customers have been asking for a clean, modern look with bold colors, minimal design, and tiers of different heights. But the Boho (bohemian) look is still strong with a typically semi-naked buttercream-covered cake and perhaps a simple dried floral with just a dash of gold.

There are several icing techniques to choose from, including classic Lambeth that uses layers of royal icing for intricate designs; the Kitsch Cake trend, which is like Lambeth but made with buttercream and fun non-classic colors; and the Heart shaped cake which was super trendy back in the ’70s but is now making a comeback.

To satisfy every guest, oCAKEsions makes cupcakes, cake pops/cakesicles, rice krispy treats, seasonal fruit or lemon meringue tarts, crème brulees, dessert shooters, and New York cheesecakes to complement the main attraction. Cookie flavors include chocolate chip, peanut butter, oatmeal raisin, and biscotti, plus decorated sugar cookies in classic vanilla, lemon, cinnamon, and chocolate.

Established in 2019, oCAKEsions specializes in bespoke cakes and desserts — custom show-stopping designs and flavors. A custom cake usually takes two weeks, allowing a week to prepare and special order any items, and a week to make the cake. Custom toppers and fondant flowers take time to dry, and these things can’t be rushed.

With a motto like “a party without a cake is just a meeting,” Jerica takes her cake obsession very seriously. Originally from the Philippines, she graduated from the Le Cordon Bleu College of Culinary Arts and began her career as a baker for Strip restaurants.

“I liked this hobby, so I learned all about it. I lusted about it, so I worked hard to get better. I loved [and continuously love] it, so I keep doing it.” She pours more than sugar and flour into her one-of-a-kind cakes, but also her love and passion.
