In recent years Caprese salads have become popular. The basic recipe calls for tomato, mozzarella and basil. A sprinkle of balsamic vinegar or a seasoning can add additional flavor.
5 slices of tomato
10 slices of mozzarella
2 avocados cut into 30 thin slices
3 to 4 large basil leaves (chopped or whole)
¼ c extra-virgin olive oil or avocado oil (optional)
1 lime halved (optional)
Lay the tomato slices on a serving plate (or whole grain toast). On top of each tomato stack a mozzarella slice, 3 avocado slices and basil. If desired, drizzle with the oil and squeeze lime juice over top. Five servings.
