6-8 ounces of filet mignon
Salt & pepper
6 garlic cloves, smashed
Fresh rosemary sprigs
Good quality balsamic (Such as Giuseppe Giusti)
Gorgonzola or blue cheese
Fresh cherries, pitted
Red onion sliced
Good quality extra virgin olive oil (EVOO)
What makes a great grilled steak?
Meat coming to room temperature
Pre-heating the grill
Letting steaks rest for 5 minutes after grilling
Pre heat grill to 500°. Season steaks with salt and pepper. Rub with smashed garlic. Lay a sprig of rosemary and drizzle with olive oil. Let sit at room temperature 30 minutes before grilling.
Rare 120-125° = 4 minutes per side
Med Rare 125-130° = 5 minutes per side
Medium 135-140° = 6-7 minutes per side
Medium Well 145-150° = 8 minutes per side
Place steak on a bed of arugula with cherries, wedge of cheese, pecans, and onion. Drizzle olive oil & balsamic. Add grilled baguette.
