Vegetable Chickpea Chili

Ingredients:

One fresh ear of corn

One quarter red bell pepper, medium diced

One quarter orange bell pepper, medium diced

Two celery stalks, medium diced

A carrot peeled and medium diced

One Vidalia onion, medium diced

2 cloves of garlic minced

A 15.5 ounce can of chickpeas drained and rinsed

 A 10 ounce can of Rotel diced tomato and green chili

One Cup grapeseed oil

1/4 cup flour

1 teaspoon cumin

1 TBSP granulated garlic

1 TBSP granulated onion

1 TBSP Pop’s Secret Original Seasoning (link below)

 Zest of 1 lime

1 teaspoon coriander

32 ounces of vegetable stock

One Cup heavy cream

1/4 cup cream cheese

In an appropriately sized pot over medium heat, add oil. Sweat first six ingredients until softened. Sprinkle vegetables with flour and coat until even. Cook for five to seven minutes, stirring constantly. Slowly add vegetable broth until it is well combined, and no lumps appear. Add chickpeas, tomatoes and seasonings. Cook 10 t0 12 minutes. Add heavy cream, cream cheese, and lime zest. Serve inside a baked potato, garnish with sour cream, cilantro and cornbread.

If you want your work to live on, break out of the box!” His sense of adventure, humor and work ethic is his trademark.
