The Nicolett, brainchild of Chef Finn Walter, focuses on cuisine native to the area. Born and raised in Lubbock, Walter uses cooking techniques he learned while working in Paris, Austin, Napa Valley and Santa Fe. 

The Nicolett, a James Beard Award semifinalist, features indoor and outdoor dining with a private outdoor greenhouse for larger events. The ambiance is simple, refined and rustic. Guests can order from the Chef's tasting menu, which changes weekly and is one of the only tasting menus in this part of the state.
