Blueberry Balsamic Lemon Ricotta Bruschetta

Try your hand at this light and bright Spring appetizer.

As the desert warms up this Spring and fruits are back in season, so is eating outside. The Queen Creek Olive Mill has the perfect appetizer or addition to your table with a delicious marriage of flavors in blueberry and lemon. The Italian bruschetta is a versatile dish and a real crowd pleaser. In this version, the Olive Mill puts together a light lemon infused ricotta on golden toasted bread topped with blueberries. The additional sprinkling of basil and their very own Blueberry White Balsamic Reduction adds extra color and excitement. The mingling of sweet and sour, a delicate ricotta, and a nice crunch of the crostini is just happiness on a plate. We invite you to try your hand at this quick and easy recipe, whether it be a family gathering or a sophisticated dinner party.

Blueberry Balsamic Lemon Ricotta Bruschetta

Serves: 6 people

Time: 5-10 minutes

INGREDIENTS:

Lemon Ricotta

  • 1 1/2 cup of whole milk ricotta
  • 1/4 cup of heavy cream
  • 1 tsp of sea salt
  • 1 tsp of Olive Blossom Honey
  • Zest of lemon

Crostini

  • 1 small loaf of French bread, sliced into 12 1/2 inch thick slices.
  • 2 Tbsp of Meyer Lemon Olive Oil

Assembly & Serving

  • 25-35 fresh blueberries
  • 12 fresh basil leaves, cut into long thin strips.
  • Blueberry White Balsamic Reduction, for drizzling.

DIRECTIONS:

1. For the lemon ricotta: add the ricotta, heavy cream, lemon zest, juice, salt, and honey to the bowl of a food processor. Mix until the ricotta is smooth and fluffy in one to two minutes. 

2. For the crostini: heat a griddle (or large cast iron skillet) over medium heat. Brush each side of the bread with Meyer Lemon Olive Oil and toast the bread on both sides until crisp and golden, one to two minutes per side. Allow the bread to cool slightly.

3. For assembly and serving: smear a heaping tablespoon of the lemon-ricotta mixture onto a piece of toasted bread. Top with three to four fresh blueberries and garnish with the basil strips. 

4. Transfer the bruschetta to a platter and drizzle with the Blueberry White Balsamic Reduction.
