Wild Mushroom Soup

1 tbsp olive oil
1 tbsp garlic
4 cups roasted wild mushrooms
1/2 cup sweet onion
4 tsp thyme
2 cups white wine
3 cups veggie broth
3 cups cream
4 tsp gluten free thickener with enough water to make a slurry
salt and pepper

1. Heat olive oil in stock pot. Add garlic, wild mushroom and onion, salt and pepper. Sauté until onion and garlic are fragrant.

2. Add thyme and wine and deglaze.

3. Add stock and cream and bring to a boil.

4. Reduce heat to medium and add thickener slowly until incorporated and simmer until thick. 

5. Adjust salt and pepper to taste.
